I know if white tail and key deer although I think you'd get more meat off a squirrel than a key deer.

Apparently, they are itty bitty critters down here. Even the white tail. Not a lot of great land for growing big deer here, although the north/panhandle area is supposed to be better for hunting than south/central FL. I haven't seen a single deer since I moved here though. Doesn't matter, cuz you can easily be "self reliant" down here with a bit of string and a hook. Fish are a lot easier to clean than deer :)

Whitetail size is based on the temperature. They get bigger as you go north up the continent. It's a surface area/mass ratio body-heat thing.KY Afield has a good video on gutting a deer on YouTube. Dig around there a while and you'll get a good idea on what to do. The first time you'll make a hash of it (ha!), but the meat's still edible and like anything, the more you do it, the better you get at it.
