Wrap 'em in meat!.

Yes ladies and gentlemen, when it comes time to enjoy asparagus, nothing beats coating them in olive oil, kosher salt, and pepper, then wrapping their little green carcasses in partially cooked bacon and shoving them in a 425° oven for 12 minutes.

Nothing.

My oldest daughter runs around the house all excited when we make asparagus. It's her favorite. She ate two of those bundles you see up there.

Oh, how the tips simply turn crispy and how the fat from the bacon just absorbs into the green flesh. When the bacon is all cooked, you can eat the whole bundle with your fingers. As a side dish for bratwurst and baby red mashed potatoes, it can't be beat.

Yeah, sure my cholesterol jumped up 12 points or so, but damn was it worth it.

I've always said there is nothing that can't be improved by adding bacon. I've never tried it with asparagus myself, but now I will for sure.

I'm currently trying to find a creative way to work bacon into our Christmas dinner. Sure, we'll have ham, and you can't very well wrap an entire ham in bacon... hmmmmm. Maybe you can...

For years, I absolutely hated asparagus. My mother only ever made canned. Once I tried fresh asparagus, with a little hollandaise sauce, I realized I actually liked it.

As Emril would say, you could wrap the bumper of a Buick in bacon, and it would taste good.

GBW, I'm actually fond of the grease myself.

However, prosciutto is bacon, perfected so it's something I should try.

One question:

"Partially cooked?" I thought bacon came in three "flavors": raw, crispy, and charcoal.

How cooked is partially cooked? Nuke 'em for 30 seconds? Panfry for 60? ... ?

On another topic, ever read the book or seen the 12-year-old TV series _Christy?_ I only ask because you share your name with a character in it.

Anwyn,

I nuked the bacon (6 strips) for about 3 or 4 minutes. You want them "halfway" cooked, I'd say.

And, no, I've never even heard of Christy, but I'll check it out.

I'm grinning now ... with my bacon, 3 or 4 minutes in the microwave is "well done." So I'm going to go with "halfway" and see how that does. This looks like a great side dish for Christmas rib roast.

The short rundown on Christy--young turn-of-the-last-century woman goes into Appalachia to teach in a backwoods holler under the direction of a Christian mission. It's a good book if you like the premise--pretty real characters. Based on the true story of Catharine Marshall's mother. The TV show, at least the series that starred Kelli Martin, was also quite good. They tried to wrap it up later (the series was cancelled on something of a cliffhanger) with miniseries starring somebody else as Christy but it was laaaame.
