I'm seriously all about Honey. Seems that I love just about every Honey ale / beer / lager out there.

How does one simulate J.W. Dundee's Honey Brown?

I agree Papazian's book is great. If you have a Brew-n-Grow near you, they can also be helpful. Nothing better than your own dark lager!

Go forth! Have fun! Bruce is on the ball about Charles Papazian's book - it has more than you want to know. One thing that makes bottling easier: Siphon from your fermenter to a bucket with a tap, mix in your primer, and use the tap to fill the bottles. Lot easier and less meey than bottling directly from a siphon hose. And don't worry right at first about IBUs, specific gravity, and other technical issues like that right at first - these are useful if you want to be able to duplicate things exactly from batch to batch, but they are not required if you just want to make beer. Do you need the exact weight and sugar content every time you bake a cake? Final advice: for your first try, just get a can of hopped malt extract and follow Charlie's instructions. First, get yourself a copy of "The Complete Joy of Homebrewing" by Charles Papazian.

It's the only reference you'll need.

As far as tips go, avoid priming sugar and go with a solution of water and dry malt extract, simmered on low heat until the malt is dissolved.

I forget the exact quantities to be used. Get that right or you will face beer bottle explosion risks.

If using canned liquid malt, which I always did, sit the cans in hot water to thin it out a bit or it will take forever to empty the goo into your pot.

That's all I can remember off the top of my head. It's been a while.
