I like to make bread. My wife finds this funny because I don't usually like to actually eat it once I've got it baked.

Anyway, yesterday I made a loaf of whole wheat since it's magnanimously cheaper than buying it and I have such a dandy time doing it. This loaf I did 100% by hand, no bread machine! Well, like usual, my whole wheat turned out to be fairly dense. My wife wants super light & fluffy bread like you buy at the store, not something resembling the density of a cinder block.

Any bread-heads out there have any good recipes or tips on this? Thanks!

The Queen has a great recipe for bread/rolls. I will send it to you if I get around to it. One secret is to use 1/2 whole wheat and 1/2 white flour.

The Mrs. is all about 100% whole wheat for some odd reason, but I told her that fluffy bread requires mucho gluten and that whole wheat doesn't have the same amount as white bread flour. I could also add a tablespoon or so of wheat gluten, but I'd still like all the different methods at my disposal.

Using Hard White Wheat is a better choice when doing whole wheat bread. The stuff that makes cinder blocks or "Moses bricks" as we call 'em is made form Hard Red Winter Wheat. Use white wheat, it's softer and gives a lighter fluffier bread when finished.

In fact last week I was at the Int'l Baking Expo and ADM is touting their new White Wheat as the "new" bakers choice. They say they have a supply chain through Honeyville if you have one near by. If not you can order it online from them.

Always sift the stuff!

Yes, son. Use a blend of flours, including the heavy whole wheat you love but mixed with some general all-purpose King Arthur-type white bread flour. You will find it is satisfying to both husband and wife (no Viagra necessary).

You DO know that "lady" derives from the word for breadmaker? (Merriam-Webster's online):

Etymology: Middle English lady, lavedi, lafdi, from Old English hl[AE]fdge, from hlf bread + -dge (from root of a prehistoric verb meaning to knead); akin to Old English d[AE]ge maid, kneader of bread -- more at LOAF, DAIRY
