Today is the day. The beer is in the fridge just waiting for me to come home.
I'm actually a bit nervous. Talking with some of the other beer guys here it's amazing the number of 'bad batches' that pop up from time to time. Makes me worry a little that somewhere in all my beer academia I missed some vital point or didn't sanitize something enough and my beer will end up tasting like some sort of fungal sorbet.
